Oven Baked Mini Donuts



Baked some mini Banana Chocolate Chips Muffins too!












It's Teachers' Day again. Baked some mini donuts to give as gifts to kids' teachers. Altogether, has to pack into 8 boxes! Nathan and Netanya wanted to treat their friends to the donuts too. In the end, made another 50pcs in the night for them them. Worked past midnight!

The mini donuts are very small. Loved the size. It's about the size of a baby's palm. Very cute! Will definitely make some more next time for kids parties.

Happy Birthday, Netanya!







Yes, it's Netanya's turn now. She wants everything PINK and with Mermaid on it! Baked her a cake with strawberry fillings. This is my first time baking a big cake to feed 25 people! With a small oven, I had to bake twice and make use of cream to join the cakes together. Not bad for my first time! I bought the figurines and all the icing decorations online and shipped from US.

The happiest moment is when her friends loved her cake and asked for second helpings! I need to improve on my piping skills though. Will work on it again!

Mocha Ice Cream Cake!




Did this cake for KY's birthday on 12 June. Bought the ice cream. I just need to bake the sponge cake. Didn't have much time to do other things as we just came back from Bintan the day before. :)

Nathan's 7th Birthday!








It's Nathan's 7th birthday on 5 June. He asked for Chocolate Banana Cake. Woke up at 6am to bake the cake for him! Spent the whole day baking and cooking his favourite food for him before he comes home from school. There's pizza, mashed potatoes and dumplings. He likes Ben 10. Added 2 Ben 10 figurines on his cake.

A New Toy!

KY bought me this Kenwood Mixer. I was actually eyeing for a KitchenAid mixer but the price difference is too great! Have eventually decided on this. It comes with many attachments. Can grind, mince, juice n others! Few days later, Robinsons send a brochure and offering the Kitchenaid at an even lower price! I was so, so , so upset! :(

Mango Sponge Cake





Baked this cake without following any recipe! Baked the sponge cake using the traditional method but think it is too dense to make Mango cake. Not very good with creaming the cake. Need more practice. After much thoughts, I think I need to put more whipping cream to get a better finishing. Will try again next time

As usual, Nathan loved it! :) KY find the cake too dense :P Nevertheless, will try to bake again another time.

Nutella Cupcakes






Baked these Nutella Cupcakes. Found the recipe by chance on the net. Very easy to bake. Look lovely! Will see how it taste later. Will wait for my 2 loyal fan to taste them for me :)

The texture and taste of this cupcake is good! Taste much better than the Chocolate Chip Muffin. Will bake them again for others to try.

Chocolate Chip Muffins




Baked Chocolate Chips Muffins but the texture is not as nice as the banana cake. Poured too much batter in a cup so they "overflowed" . As usual they were eaten by Nathan and KY!

Mango Cheese Cake




Baked this cake twice. Once for my family and the other one for KY's family gathering at Uncle Robert's house. They like the cake very much. Daphne even brought some to work to share with her colleagues and they like it too. I'm very happy with the response! Satisfaction comes when others like the cake you bake :)

Banana Chocolate Chip Muffin

I used the same recipe as the banana cake and added chocolate chips into it. This time round, shared these muffins with some of my ex-colleagues as well as my cousin, Marilyn's family. They liked it very much. What shall i bake next?

Japanese Cheese Cake




Baked this Japanese Cheesecake. Loved it! The cake was finished within an hour! :) Will bake it again.

Here's the Recipe from Alex Goh "Fantastic Cheesecake" Book :

Ingredients

(A)
160g Cream Cheese
25g Butter
120g Milk

(B)
40g Flour
30g Cornflour

(C)
4 Egg yolks

(D)
4 Egg Whites
1/8 tsp Cream of Tartar
100g Sugar
pinch of Salt

Method
1
. Grease and lined the bottom of the pan. Wrap outside of the pans in foil.
2. Place (A) in mixing bowl and stir over double-boiler until thick. Remove from the double boiler
3. Add (B) and mix until well combined. Add (C) and mix until well blended.
4. Whip the egg whites in (D) until foamy. Then add the remaining (D) ingredients. Continue
whipping until soft peaks. Add it into the cheese mixture from step (3). Mix until well
incorporated.
5. Pour the cheese filling onto the prepared pan. Bake in water bath at 160 deg C for 40 - 45
mins ot until firm and golden brown.
6. Remove the cake from the oven. Remove the cake from the mould immediately. Set aside to
cool.
7. This step is my suggestion : Put the cake into the fridge overnight. Taste better when it is cold

Baked this banana cake quite some time ago. Did not want to waste the bananas so decided to cut and placed them all over the cake. Nathan and Ky ate the most :) Taste good ! Yummy!

Disney Cookie


Baked these disney cookies at midnight yesterday! Look at the pictures and you know outlook not too good. Taste wise - good!
Bought these cookie cutters last year but never get to use. Had problem using the cutter. Kept sticking to the dough. As u can see from the pic, I dust lots of flour to prevent the sticking! Haha..
Think I can do a better job than this. Will try again sometime next week. Thought of adding chocolate flavour. Wish me luck!

Baking Moments with My gal

















It's been a long time since I last bake from scratch. Have been lazy all these years and have always buy Betty Crockers ready mix to bake. 2 years since my youngest boy was born. Time flies.

Chanced upon this recipe one day and decided to have fun with my gal. Outcome - not to bad for the first time! She helped me with the decorations. Look at the pics. All her artwork or most of it are hers! As she decorates, she will tell me what expressions she was giving to the doggy's face - happy, sad, angry, bored etc ...

Netanya was so happy with her creations and was eager to show off to her friends in school the next day!
